Imagine coming home to pineapples with a different twist. Pineapple fried rice is a quick and easy go-to meal after a long day. Tropical, Sweet, Spicy is the description of the perfect Pineapple Fried Rice.
INGREDIENTS
- Rice
- Diced pineapples
- Vegetable oil
- Minced Garlic
- Garlic sauce
- 2 eggs (whisked)
- Chopped onion
- Diced red-ball pepper
- Salt
- Lime (divide in two)
- Chopped Cilantro leaves
METHOD
- In a pot, pour water and rice and allow to boil for 7-10 minutes, then drain and set aside. In a bowl, whisk your egg with a pinch of salt and set aside.
- In a non-stick pan, pour 1 tbsp of oil, heat up, then fry the eggs until it is scrambled. When it is done, transfer to a small bowl. Pour another tsp oil into the pan, add the pineapple and pepper. Cook while stirring until the liquid is dissolved, and the pineapple is caramelised on the edges.
- Add the onion and garlic and cook until sweet-smelling while stirring. Transfer to your bowl of eggs.
- Pour 2 tsp oil into a bigger pan, pour the pineapple mix and garlic mix and mix together. Add the pre-cooked rice and stir until well incorporated for 3 minutes. Add the garlic sauce and squeeze the lime juice of half lime and stir. Season with salt. Set aside.
- Serve in a serving bowl and garnish with a sprinkle of the other lime half, add cilantro leaves.

PINEAPPLE BUNDT CAKE
INGREDIENTS
- All-purpose flour
- ½ cup butter
- Sugar
- Pineapple juice
- ½ cup melted salted butter
- 3 eggs
- 1 cup powdered sugar
- 1 cup crushed pineapple
METHOD
- Pre-heat oven to 3500F. Grease a bundt pan with butter.
- In a large bowl, pour the melted butter, pineapple juice and flour and mix thoroughly. Whisk the eggs and add into the bowl, together with crushed pineapple and mix for 2 minutes.
- Pour the batter into the bundt pan and bake for 35-40 minutes and use a toothpick to check if it is ready by inserting it and seeing that is well baked.
- Allow the cake to cool while in the pan.
- Place a saucepan over medium heat, add butter and allow to melt. Mix the powdered sugar and pineapple juice. Stir, then add to the melted butter and stir until a little thick. Remove from fire and allow to cool.
- Use flour to poke holes all over the bottom of the cake, then pour ¾ cop glaze over the bottom of the cake.
- Turn the cake over onto a platter, then drizzle the remaining glaze over the top of the bundt cake.
